I would say we fall somewhere in the middle of “healthy” eating. We try not to do fried foods at home. We work to get fruits and veggies everyday and usually at every meal, but we also do frozen pizzas and mac n cheese especially on nights we are headed somewhere. So, I have deemed the month of July the month to try new and “healthier” recipes. I’ll share some of them as well as showing you some of our “healthier” favorites. If you are hard-core organic or won’t have anything to do with something from a can this may not be what you see as healthy.
So, here’s a recipe we’ve tried a couple of times around here and we really like it.
Yellow Peppers and Onions with Steak
*This was adapted from a recipe I originally found at cooks.com.
**The bouillon in the picture is for a gravy that is with the original recipe. I don’t make it because we love this without it.**
1 lb steak (we use rib eye, but sirloin would be a leaner cut), cut into strips
1 yellow bell pepper, cut in strips
3 cloves garlic, minced
1 small onion, sliced into rings
1 T Worcestershire sauce
1/3 C brown sugar (you could reduce this to 1/4 C or substitute sucanat)
1/2 t pepper
1/4 t crushed hot peppers
1 1/2 C water
1 T ketchup
Cut up your steak of choice into strips.
Throw in your onion slices and saute together.
Add everything else and cover and cook over low heat for 12-15 minutes. Don’t forget to make your rice:).
Serve over rice with another veggie and you have a quick and wonderful meal. My kids love this and there is never enough:).
